  • 200 grams Gaia T65
  • 200 grams Zeus Rye Flour
  • 52 grams Banana
  • 40 grams Walnut
  • 6 grams of salt
  • 50 grams Sourdough
  • 0 grams of water

Instructions

  • 1. Place the flour(s), salt and sourdough in a bowl.
  • 2. Add the water and knead the dough for 5 minutes by hand or with a food processor on the lowest setting.
  • 3. Bake the bread for 20 minutes with the lid on the pan. Then remove the lid and bake for another 15 to 20 minutes. The bread is ready when it is golden brown in color. Let the bread cool on a rack for fifteen minutes without the paper and pan.
  • 4. Cover the bowl tightly with a lid or plastic wrap. Now let the dough rise for 12 to 15 hours at room temperature.
  • 5. After the rising time, sprinkle flour on the counter so that you can place the dough on it. Tilt the bowl and carefully loosen the dough from the bowl. Be as gentle as possible with your dough, for the airiest end result.
  • 6. Grab the edges one by one, stretch them a little and gently press them into the middle. Do this until you have a dough ball. See the video.
  • 7. Place the dough, with the folded side up, in a bowl lined with baking paper. Sprinkle half a tablespoon of flour over it and cover the bowl with a lid or plastic wrap. Let the dough rise again for 4 hours at room temperature or in the refrigerator.
  • 8. Preheat the oven, with the roasting pan in it, to 220˚C.
  • 9. Lift the baking paper with the dough from the bowl and carefully place it in the preheated roasting pan. Replace the lid on the pan and place the roasting pan back in the oven.
  • 10. Bake the bread for 20 minutes with the lid on the pan. Then remove the lid and bake for another 15 to 25 minutes. The bread is ready when it is golden brown in color. Let the bread cool on a rack for fifteen minutes without the paper and pan.
